Summer Salad

There is nothing better than a refreshing, healthy salad on a hot day.  I love a barbecue but sometimes, meat is too much for me and isn’t even that tasty!  This salad is perfect as a side or even as a whole meal!  This salad is so versatile and you can use any salad vegetables you have in the fridge.  This salad is super healthy and super filling, I hope you love it as much as I do!



1 Bag of Salad Leaves

Half quantity – Broccoli Rice

1/2 Cup – Quinoa (cook according to instructions on pack)

1 Red Pepper – diced

1/4 Cucumber – diced

1/4 of a Pomegranate

*Optional* – Shredded Chicken Breast

Salt & Pepper



4 tbsp – Extra Virgin Olive Oil

2 tsp – Wholegrain Mustard

1/2 a Lemon – Juice and Zest

Salt & Pepper



  1. Follow my recipe for Broccoli Rice, then leave to cool.
  2. Cook the quinoa and leave to cool.
  3. Make the dressing by mixing the mustard, lemon juice and zest into the olive oil. Season to taste.
  4. In a large bowl, empty the bag of leaves and mix in the pepper, pomegranate and cucumber.
  5. Add the broccoli rice and quinoa, mix well. (If using chicken, add now)
  6. When ready to serve the salad, mix in the lemon dressing.
  7. Season with Salt & Pepper then enjoy!
