We’ve all heard of cauliflower rice, and to me.. it’s a little boring and doesn’t have much flavour! I was wondering what to have with my vegan curry (recipe coming soon!!) the other night because I really wasn’t in the mood for rice and didn’t want chips as I wanted a healthy meal! I had broccoli in the fridge so I decided to make something different to boring rice… broccoli rice!
This rice is definitely healthier and much more interesting. It’s a great way to eat vegetables and also vegan and gluten free, yay!! Also, it takes so little time to make. No more waiting for the rice to cook.. because this will be done in around 5 minutes! The broccoli can be grated by hand or put in a food processor.. but I definitely recommend using a food processor!
This ‘rice’ can be served with pretty much anything. Curries, in a salad, as a side in a bbq or even with a roast dinner! This is so much better and more flavourful than boring old boiled broccoli or rice!
2 cloves of garlic (minced)
Salt & Pepper
Olive oil to fry
In a food processor, pulse the broccoli until fine. Some chunks are okay but try to get most of it small.
Put the broccoli in a large bowl then add in the minced garlic.
Season with salt and pepper.
In a large frying pan, heat up the olive oil then fry the broccoli for 4-5 minutes.
Serve and enjoy!!
