Leek & Potato Soup

St. Davids day is the national day in Wales, celebrated on March the 1st every year.

To celebrate the day, I thought I’d post a ‘bonus’ recipe today! (aren’t you lucky!!) 😉 If you haven’t seen my latest post, please check it out! I posted a recipe for Swedish Princess Cupcakes , and believe me… THEY TASTE AMAZING!!

Here’s my super simple recipe for Leek & Potato soup. You can half the recipe if you think the portion size is too large for you!

Ingredients

Leek 400g (Washed and chopped into large chunks)

White Potatoes 500g (chopped quite small)

Brown Onion 1 large

Garlic Cloves 2

Vegetable Stock Cube 1

Nutmeg 1/2 tsp

Dried Herbs 1tsp

Salt & Pepper

Double Cream to drizzle on top (optional)

Method

In a large pan, lightly fry the leek, potatoes, onion and garlic.

Crumble in the stock cube, then cover the vegetables in boiling water.

Add in the nutmeg and dried herbs, then leave to simmer until the potatoes are soft.

Leave the soup to cool slightly, then blend using a hand blender or blender.

Season with salt and pepper.

Heat up in a clean saucepan then enjoy!
